Breakfast Smoothie
-
3 tablespoons of ground flaxseed (can be purchased ground or ground in a coffee grinder)

½ to 1 cup Knudsen's Papaya Juice
-
½ cup water
-
1 frozen banana (peel ripe bananas, place in plastic bag and store in the freezer)
-
½ cup frozen blueberries (***or other frozen fruit)
-
1 tablespoon **Tahini
-
Blend all ingredients in blender until smooth
***Make sure the frozen fruit that you use is just fruit and does not have added corn syrup or sugar!
** Tahini is sesame butter.
You can get it in health
food stores. It will make
your drink creamy and add
good calcium. You can also
try a tablespoon of almond
butter. I would not use
peanut butter if you are
nursing as babies can easily
develop an allergy to
peanuts early on.
Apples & Yams
I love the way this dish smells when it's cooking. I have served this as a side dish and also made it for breakfast.

2 Garnett yams

Bake at 375 degrees for one hour or until done

2 Red Delicious apples, peeled and cut into small chunks

1 tablespoon of honey
-
¼ teaspoon cinnamon
-
¼ teaspoon vanilla
-
½ cup chopped almonds
-
1 tablespoon olive oil
Over low heat, add apples to olive oil and cook until tender (about 5 minutes or more). Add honey, cinnamon, vanilla and almonds. Cook another few minutes until the mixture makes its own sauce.
Remove Garnett yams from oven. Cool enough so that you can peel off the skin. Mash the yams and then pour some of the apple mixture on top. Serve warm. Two yams make 2 to three servings of this dish. Increase ingredients according to how many you want to serve.
Cold Vegetable Soup
This recipe is a variation of gazpacho. It's easy to make. The soup is rich in vitamins and minerals and is also very low-calorie. It keeps in the fridge for a few days at a time and is nice to have on hand for lunch or late afternoon snack.
The easiest way to make this cold soup is in a Cuisinart. If you don't have a Cuisinart, you can chop each vegetable finely and add it to the mix.
Thoroughly wash and cut all vegetables into chunks before placing them in the Cuisinart. Use the sharp chopping blade, not the grater.

1 cucumber

3 carrots
-
4 celery stalks

3 to 4 tomatoes

1 medium sized red bell pepper
-
1 medium sized green bell pepper

2 scallion
-
Bunch (about ¼ cup) of fresh cilantro

1 Knudsen's "Very Veggie" bottled juice
-
Juice of one lime
-
Tabasco Sauce (optional)
Chop all vegetables and cilantro until fine in the Cuisinart. Place in large mixing bowl.
Stir in one bottle of Knudsen's "Very Veggie" bottled juice. Add lime and a dash or two of Tabasco if you like.
Store in the fridge with a container that has a tight fitting lid…like a Tupperware bowl.
